Food: Red Onion, Beetroot & Goats Cheese Bruschette

If you’re looking for a decadent lunch, or perhaps just looking for ways to use up beetroot, (that’s how I found this recipe) then you’ve come to the right place!

This really is the tastiest lunch, perfect for a Saturday afternoon with a bottle of Prosecco! The recipe gives instructions for bruschette but I’ve found it’s just as good (and a lot quicker) with a fresh baguette. I’ve made this twice now, and the second time not realising I bought Greek Crumbly Cheese (I thought Greek said Goats for some reason – cue the opticians) but it still tasted good.

Makes 8
For the bruschette
⅓ baguette
Olive oil
Dried rosemary, crushed  (optional)

For the topping
1 tbsp olive oil
450g red onions, thinly sliced
1 tbsp caster sugar
1 tbsp red wine vinegar
450g cooked beetroot, diced
Salt and black pepper
200g soft goat’s cheese
Rosemary leaves, to garnish (optional)

1 First make the bruschette. Cut the bread into 8 slices, then brush each slice on both sides with olive oil. Sprinkle both sides with a good pinch of crushed rosemary. Place the bread on a baking sheet and bake in a preheated oven at 150C/300F/gas mark 2 for about 20 minutes, until crisp. Cool on wire racks. They can be made up to 1 week in advance and kept in an airtight container.

2 Heat the olive oil in a large saucepan, add the onions, cover and cook for about 15 minutes, until they’re very tender, stirring them every 5 minutes. Add the sugar, wine vinegar and beetroot, then simmer gently, uncovered, for 10-15 minutes. Remove from the heat, season and cool.

3 Spread the bruschette with goat’s cheese, top with caramelised onion and beetroot and a piece of rosemary, and serve.

Food: Best Beef Stir Fry

 

This is quite possibly the easiest, quickest and tastiest stir fry dish I know – as of yet – perfect for a quick  and healthy mid week meal.

Here’s the recipe for 2 (can’t quite remember the original source unfortunately)

Marinade quick fry beef strips in:

  • 2 x tbsp balsamic vinegar
  • 2 x tbsp soy sauce
  • 2 x tbsp lea and perrins

Cover with cling film and let the beef marinade overnight minimum if not 48hours – very important!

Prep your veg, I would use the following:

  • 1 x large carrot sliced into long thin batons or shaved strips
  • 1 x red/orange/green pepper chopped into thin slices
  • 1 x red onion cut into thin wedges
  • 1 x small bunch of spring onions chopped
  • 1 x large handful of cashew nuts

Heat a dry wok, and fry the beef for 30 seconds – 1 minute, holding the marinade back. Then stir in all the veg and left over marinade sauce and stir for another minute or so. Serve with rice or noodles and that’s as easy as it gets!

The Big Day | 26.7.14

So here they are, finally, our wedding photos, not all of them but just a snapshot of the day, all taken by the talented Sarah Bunting of styling & events company, What Peggy Did Next. Sarah was once upon a time my Editor in Chief at the fashion & trends forecasting company I used to work for so it was lovely having someone I know being our photographer, although it made it all the more emotional! I’ve also included some lovely photos that my Dad took, as being another super talented photographer, he just couldn’t resist snapping away, as much as my Mum was trying to stop him!

We knew quite early on how we wanted our big day; relaxed, summery, rustic and outdoorsy with a lot of DIY. We really wanted the day to be individual to us, not just an off the shelf style wedding and it really was that as we had to source literally everything ourselves, from the flowers and decorations to the cutlery and placemats, EVERYTHING. And this was no mean feat I can tell you! Our venue, The Great Barn was literally a shell that was being renovated, to be completed by the time of our wedding, so there was a lot to do.

As my friends and family know quite well, I’m a worrier. I get anxious and tied up inside with just the thought of being late for a train or forgetting something when going away, so when deciding to go down this route of sourcing everything myself, I don’t think I realised how much pressure I was putting on myself. But everything seemed to come together quite coincidentally which was quite freaky at times but I kept taking it as a sign that everything would work out, and it really did. For example, we were just about to put a deposit down on a venue in the New Forest, which we loved but weren’t 100% on for a number of reasons, when Dan suggested we enquire about a local barn he knew of and used to go fishing near. It was a bit derelict but he had read in the paper that it was being taken over by a local theatre company. So, I called on the off chance, and it just so happened that they were just discussing the possibility of holding weddings there and we were the first to enquire – so we arranged a meeting.  The barn is just 5 minutes from our house, was under half the price of the other venue and was 10 times as beautiful, we found a winner!

There were a lot of DIY elements of the day which included all the stationery, designed by myself, reflecting the high summer wild flower theme of the day – stay tuned for pictures! The flowers were all grown by my mother-in-law and she even arranged them all too – all the bouquets/button holes, head dresses, ceremony archway, the strawberry plant table plan and strawberry hanging baskets! The strawberry idea came from my now husband as our local area was once known as a big strawberry growing community. The pom pom decorations were made by my bridesmaids, the ornate glassware and jam jars were collected by my friends, family and I and the blackboard signs were made by my Dad & written by me. My Mum made and decorated the delicious fruit wedding cake and the dessert table was made possible by my friends & family. We even put the bar together ourselves – we sourced some old wine barrels and a reclaimed table top for our second bar. All of these things were really important as it meant everything was unique to our wedding.

Now to talk about the dress. This was another strange coincidence as I had always imagined the kind of dress I wanted and even considered getting it made as I had sketched my dream dress shortly after Dan proposed – why wait eh! But then by some magical intervention, I didn’t need to as I found it, already brought to life by Spanish wedding dress label Pronovias. It was quite scary how accurate it was to my drawing; the graduating lace with illusion neckline, subtle fishtail silhouette and open lace back – it was clearly meant to be! And the fact it was by Pronovias was also quite funny. One of my bridesmaids had worked in a bridal shop since school and with me studying fashion at college, she had given me a bag of scrap fabric from the shop to use in one of my projects, along with a massive Pronovias catalogue she thought I might like, which I LOVED and still have to this day, so to find my dream dress and then to realise it was a Pronovias was another meant to be moment!

My shoes, had to be blue (I was often called smurfette by my friends when I was younger) and I found a gorgeous pair (after much searching) with asymmetric straps in suede at Next for just £30 and they were soooo comfortable. I went for minimal accessories and initially even dismissed the idea of a veil, until my sister found the most gorgeous elbow length design with lace trim that perfectly matched the dress. I was having one of my dress fittings when she just plonked it on my head, and that was that. I always knew I wanted a floral headdress as well so I decided to have both a day and an evening look. For jewellery, I chose to wear the first pair of earrings Dan ever bought me, I borrowed my Nan’s engagement ring (something borrowed) from my Mum. stacked on my heart ring I have worn since I was 10 (something old) and my parents bought me a beautiful gold bracelet for the occasion (something new) too.

The day itself was incredible and went just far too quickly. It was the hottest day of the year, and as our best man said in his speech, “a great day for a wedding but not for suits”. Considering my rep for being a worrier, I still can’t believe how relaxed I was the whole day, especially in the morning, even my hairdresser said how I was the most relaxed bride she has ever worked with! But I guess I saw no point in stressing, there was nothing more I could do, all the planning and set up had been done, and it was finally time to enjoy it and marry my best friend on our 11 year anniversary!

There are just too many special moments throughout the day to mention but some that stick firmly in my mind include:
– Holding my Dad’s hand as he walked me down the isle.
– Dan holding my hand with the biggest smile on his face throughout the ceremony.
– My bridesmaid Rosie’s beautiful ceremony reading that she wrote herself.
– The FOOD (of course) – we had a sit down hog roast, with homemade apple sauce, coleslaw, corn on the cob, Mediterranean veg and roast potatoes with a help yourself dessert table made by our friends and family.
– My Dad’s and my husband’s speeches which were so heart warming. They were both so nervous but did so well.
– Dan & I playing table football with our little cousins, and me being a little bit too competitive.
– My sister/Maid of Honour performing ‘I’d rather be’ by Clean Bandit at our evening reception.
– My Bridesmaid Kelly performing a song she had wrote just for the occasion, which made me cry, a lot.
– Our first dance to Ed Sheeran’s ‘Kiss Me’ and coming home with a mountain of wedding cake and sitting up with my husband eating cake, absolutely buzzing, reliving the whole day. It was perfect.

My advice for any brides to-be out there, which I was given myself, is to take the time to step back and take it in throughout the day, these are moments that you will really remember. Also, it may sound like a given, but at so many weddings, you barley see the bride and groom actually enjoying the day together, so make the effort to spend as much time greeting and chatting to guests together. Dan and I made a little pact to stick together and am so glad that we did.

Food: Dark Chocolate Orange Cake

A few weeks ago now I took on the task of baking my Dad’s birthday cake – so it had to be good – no pressure!

Both my parents love dark chocolate so started looking for recipes when I found a great looking Dark Chocolate and Orange Cake recipe on the BBC Good Food website – such good recipes on there! With Terry’s Chocolate Orange being a staple at our family Christmases, this recipe was a no-brainer.

So, I bought all of the ingredients, but when it came down to begin baking, I was reading through the method, when it dawned on me, this could either go really well, or really bad. One, I have never added a whole blended orange to a cake, and two, used such a large quantity of sunflower oil .

But I carried on, albeit anxious at how this may turn out especially as I’d only given myself the night before to bake this for the first time. But I boiled that orange and I blended it, and added it to the sunflower oil cake mixture, popped it in the oven and it was smelling good – well how can a mixture of chocolate and orange not smell good I guess!? It was going well…

Then it came to the chocolate ganache. For some reason, it just wasn’t blending right. But after some serious power stirring, which also doubled up as my exercise for the day, it was looking pretty good!

Once it had cooled, I decorated the cake with the ganache and some orange peel as I couldn’t find any candied orange (*tip – put the orange peel on at the last minute to keep it looking fresh) and it looked rather lovely!

So looking rather impressive (the cake) I took it round to my Mum & Dads eager for everyone to have a slice. Nervous that is was going to be a bit ‘bitty’ from the whole juiced orange, it was actually OK although very, very rich! Eaten cold – not that enjoyable, but warmed up and served with a dollop of cream or ice cream – delicious!

So I would definitely recommend this cake – just serve it warm with cream (probably my favourite of all serving suggestions!)

Food: Good ol’ mac ‘n’ cheese!

IMG_1396Oh I love a good mac ‘n’ cheese, I really do….just all that cheesy gooey goodness!I found a great recipe over at the BBC Good Food website and added cherry tomatoes and little chunks of chorizo which makes it even better and a bit more substantial. The hardest bit is trying not to burn the cheese sauce!

The best bit though, has to be the crispy breadcrumb topping to give it a little bit of crunch, and of course served with a bit of garlic bread.

It’s only an iPhone pic unfortunately as its getting harder to resist eating it straight away!

Food: Spicy lamb meatballs with sweet potato fries & corn

This is a great recipe I’ve adapted from one of Jamie Oliver’s, as I just didn’t have all the ingredients or be bothered with a food processor on a weekday evening and this was still really delicious!

The trick is, to pan fry the onion and crushed garlic first and then combine into the fresh lamb mince – you can then adapt it from there and add in what you like for flavour! I used a lot of paprika, a pinch of cumin, tsp of mustard and some dried chilli flakes for a nice kick. Simply use an egg and bread crumbs to bind (with your fingers), roll into balls and chuck in amongst the sweet potato fries in the oven till done for a nice easy tray bake dinner. Once done, drizzle the meatballs with lemon juice and serve with sour cream and corn on the cob – gulp! It can be a bit time consuming, but definitely worth it for something a bit different.

This weekend my Mum gave me 2 punnets of blueberries as she over ordered on a food shop so my baking partner in crime Jem and I decided to research some blueberry baking recipes and found this gem!  The lime twist on the drizzle was such a great alternative to lemon and the mix of blueberries and raspberries works really well – definitely serve straight from the oven with extra drizzle! (We just cooked it in a standard cake tin and baked for an extra 5-10mins) Would be great in the summer for a BBQ so I’ll be making this again in a few months for sure.

With the leftover fruit, I also knocked up some American style pancakes for breakfast this morning (and lunch!) – the perfect remedy for a cider induced night before! Find the recipe here – worked perfectly with lots of golden syrup – gulp!

Have you ever have had a meal where you savour every single bite and wish it would never end, then sit back and think damn this is why I love food! Well this was one of those delicious moments, but first of all, I’ve got to admit that a) I can’t take credit for cooking all of this delicious dinner and b) this photo just doesn’t do the taste any justice!

The boyfriend – oops – no, fiancé :), brought home a third of a whole deer recently including these medallions, and I could not recommend this venison recipe enough! As the other half knows how to cook a good steak and crispy homemade chips, I just found a great sauce to go with it, you can find the recipe here – I also added a spoonful of honey instead of the orange and it worked brilliantly, the whole thing just melts in the mouth! You need to try this – and yes it does taste like beef, but lighter and healthier 😉 win win!

Food: Apple & Almond Dessert Cake

OK OK…yes it does look a little…well done :/ but I’m still getting to grips with my oven! Surprisingly though, it wasn’t dry in the slightest because of the thick layer of apple.

This cake was one of easiest and tastiest I’ve made which is always a selling point – maximum taste, minimum effort – I recommend this to anyone and it certainly went down a treat with the family – a definite crowd pleaser! I might even add in a little cinnamon next time for a festive twist.

First off all, apologies for the awful photo quality, it was taken on my iPhone last minute! But I’m glad I did take a photo, this was a seriously good Moroccan lamb shank dish from my Jamie Oliver app and made a great alternative to a traditional Sunday lunch. It was a pretty simple chop and chuck in kind of recipe, but as it was a Jamie Oliver recipe, there were a lot of ingredients to chuck and buy but well worth it for a special Sunday dinner!
